Ingredients

Serves: 8

For the chocolate cookie dough base:

  • 1 scoop Cookies & Cream Pharma Whey® HT+ Powder
  • 30g coconut flour
  • 2 tablespoons cacao or cocoa powder
  • 1 tablespoon stevia
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon vanilla extract
  • 75ml milk (dairy or almond)

For the cookies dough balls:

  • 1 scoop Cookies & Cream Pharma Whey® HT+ Powder
  • 30g coconut flour
  • 1 tablespoon stevia
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon vanilla extract
  • 75ml milk (dairy or almond)
  • 30g dark chocolate, cut into tiny chunks

For the ice cream:

  • 3 frozen bananas
  • 2 scoops Cookies & Cream Pharma Whey® HT+ Powder
  • 2 tablespoons milk (dairy or almond)
  • 1 teaspoon vanilla extract

For the chocolate drizzle:

  • 30g dark chocolate, cut into tiny chunks
  • 1 teaspoon coconut oil

Method

Prep: 20 min › Cook: min › Ready in: 380 min

  • First make the base: Mix together the protein powder, coconut flour, cacao/cocoa and stevia in a bowl. Stir in the coconut oil, vanilla and milk and mix to form a soft dough (add more liquid if needed).
  • Press this into a lined small but deep tin or tupperware box to cover the base and form a generous base layer. Set aside.
  • Now make the cookie dough balls: Mix together the protein powder, coconut flour and stevia in a bowl. Stir in the coconut oil, vanilla and milk and mix to form a soft dough (add more liquid if needed) then fold in the chocolate chunks.
  • Divide into 8 and roll them into mini balls. Set aside.
  • Make the ice cream: Place all of the ingredients in a high-power blender and whizz up until thick and smooth. Pour this over the base then gently press in the cookie dough balls on top. Place in the freezer for at least 4 hours to set.
  • When ready to serve, remove from the freezer and place on a chopping board. Cut into bites (making sure one whole cookie dough ball remains).
  • Gently melt the coconut oil and dark chocolate then drizzle over each. Now eat straight away! Keep remaining bites in the freezer for up to 1 month.
